Latkes.<br \/>\n<\/strong><\/span><span style=\"color: #0861a6;\"><strong>Varied names.\u00a0 But the same food.\u00a0 And a shared heritage.<\/strong><\/span><\/h2>\n<p>On 28 May 2015, the Ukrainian Jewish Encounter launched a groundbreaking traveling community exhibition entitled <a href=\"https:\/\/ukrainianjewishencounter.org\/en\/category\/our-initiatives\/journey-through-ukrainian-jewish-encounter\/\">\"A Journey through the Ukrainian-Jewish Encounter: From Antiquity to 1914.<\/a>\" As the title suggests, the exhibition explores the two thousand year presence of Jews on Ukrainian lands and their shared historical experience with Ukrainians through long periods of co-existence, interaction, and multi-faceted cultural cross-fertilization.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-4102 alignright\" src=\"https:\/\/ukrainianjewishencounter.org\/media\/Babcias_book_covers.png\" alt=\"Babcias_book_covers\" width=\"490\" height=\"451\" \/><\/p>\n<p>And this includes a shared cuisine.<\/p>\n<p>To celebrate this common culinary heritage, we offer several recipes from Mary Kuschnir's cookbook, <em>Mamas\u2019 and Babcias\u2019 Best Recipes<\/em>, of popular dishes that can be found on Ukrainian and Jewish tables around the world. The recipes are reprinted with Ms. Kuschnir\u2019s permission. This hearty and luscious soup originated in Ukraine, where beetroot is a staple. Ms. Kuschnir\u2019s borsch recipe is available <a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Borsht.pdf\">here<\/a>.<\/p>\n<p>Did you know that <strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Holubsti.pdf\">holubtsi <\/a><\/strong>(commonly known as cabbage rolls) literally means \u201clittle pigeons\u201d?<\/p>\n<p>Ms. Kuschnir's reveals the secret of preparing <strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Nalysnyky.pdf\">nalysnyky <\/a><\/strong>(better known to the world as crepes): Cook them until the tops are dry before flipping them over. Then cook the other side for a few seconds.<\/p>\n<p>Recipes for <a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Potato-Pancakes.pdf\">daruny\u00a0<\/a>\u00a0(although Ms. Kuschnir provides several different names for the dish\u2014including kartoplanyky or pljatsky) have been handed down from one generation to another. Known as potato pancakes, the dish is now going\u00a0<a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Potato-Pancakes-Upscale.pdf\">upscale<\/a>.<\/p>\n<p><strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Varenyky.pdf\">Varenyky <\/a><\/strong>are another dish that are becoming haute cuisine. One Toronto fundraiser for individuals with special needs in Lviv, Ukraine featured varenyky with a gourmet filling of potato and porcini mushrooms. Ms. Kuschnir offers the many different methods of making varenyky\u2014and the multiple ways of achieving the ideal dough.<\/p>\n<p><strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Kuschnir-Honeycake.pdf\">Honeycake <\/a><\/strong>is the perfect food for a celebration.<\/p>\n<p>Media offers a world of corresponding Jewish recipes for several of the dishes featured in Ms. Kuschnir\u2019s cookbook. A select number of recipes, compiled by Ms. Rodal, can be found <a href=\"https:\/\/ukrainianjewishencounter.org\/media\/Corresponding20Jewish20Recipes.pdf\">here<\/a>.<\/p>\n<p>Several more recipes are offered from Ms Kuschnir\u2019s book for those who want to continue the tasty journey in culinary cross-fertilization.<\/p>\n<p>Homemade egg noodles, known as <strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/lokshyna_egg-noodles_Kuschnir-1.pdf\">lokshyna<\/a><\/strong>\u00a0are an ideal addition to any soup. Lokshyna can be made in advance in large batches and saved for later use.<\/p>\n<p><strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/KuschnirDillPickles.pdf\">Dill pickles<\/a><\/strong>\u00a0add zest to any time of the year, while<strong> <a href=\"https:\/\/ukrainianjewishencounter.org\/media\/KuschnirPoppySeedRoll.pdf\">poppy seed rolls<\/a><\/strong>\u00a0continue to be an Old World treat. Preparing a\u00a0<strong><a href=\"https:\/\/ukrainianjewishencounter.org\/media\/KuschnirBabkaCake.pdf\">sweet babka<\/a><\/strong>\u00a0may be a challenge, but this delicious treat is appreciated by family and friends.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Borsch.
